"The way that the Grill is a safe and comfortable place to be, both as an employee and as a customer."
* How does good prep affect the rest of the kitchen during service?
"Good prep provides support for the kitchen as a whole, balancing making the larger items for the week and assisting the line with the specific needs of the day."
* What's a prep skill or tool that is unique to the little grill?
"With the shape (wonky) and size (small) of the kitchen, active awareness of what is happening in various parts of it is key."
* What's one skill you've mastered? One skill you want to learn next?
"I really enjoy the little ways things fit together. Figuring out how best to do multiple tasks in a small space is incredibly satisfying, and while I don't know that l've mastered it, l always enjoy the challenge. I'd like to learn more of the line.
Honestly, I'd like to learn all of the roles. Getting an informed and cohesive understanding of how things run is incredibly satisfying."
