In 1992, Josephina, a native of Mexico, came to work at the Grill and taught the crew to make the food that is being served tonight. 

On your plate...

Josephina taught us to press our own
tortillas, cook them on the grill, and stuff them with spiced potatoes and black beans. Once they're fried, we stuff them with cabbage, radish, pico de gallo, sour cream, jalapenos, and parmesan cheese (there’s a story). These look like tacos but
Josephina called them quesadillas (no one is clear why:) Also on the initial plate - a cheddar cheese enchilada made with house-made mole and a yellow corn tortilla potato "roll-up" topped with all of the above, as well as refried pinto beans and seasoned brown basmati rice.
